Easy Peasy Sun Butter Recipe
I decided to get looking for delicious healthy snack recipes after a breast cancer diagnosis and came across this easy peasy Sun-butter recipe from http://www.alphafoodie.com using just 1 yes 1 ingredient only – Sunflower Seeds 🌻
I made it last Sunday morning for breakfast and from preparation to plate in 30 minutes it was a stress free make and utterly delicious 😋
A really healthy and most importantly delicious alternative to Peanut Butter as the health benefits of Sunflower Seeds include lowering blood sugar, blood pressure and cholesterol as well as being good for the heart and a natural anti inflammatory.
Sunflower seeds also contain magnesium, potassium, zinc, iron and folate as well as essential fatty acids and vitamins A, B and E.
Sunflower seeds also contains 2g of protein per tablespoon and zero cholesterol !

In my humble opinion best enjoyed on hot buttered toast 🌻
One of the best things about this recipe is that you don’t have to worry about measuring things out ( or at least I didn’t 😊 )
I use 150g bag of Sunflower Seeds available from supermarkets, health food shops and on-line which made around 6 generous servings – so as a rough guide you can work out your quantity of Sunflower seeds based on the number of servings you require.
The Sun Butter can be stored in the fridge for up 2 weeks in an air tight container or glass jar.
Here is how I made my first batch of Sun Butter
Step 1. Easy Peasy Sun Butter Recipe
Turn on oven to Gas Mark 4 ( or electric oven equivalent )
Step 2.
Spread Sunflowers Seeds evenly on a baking tray and pop in the oven and toast for approx 5mins or until the Sunflower seeds start to turn a golden colour but not brown or burnt !
Step 3.
Remove from the oven and allow to cool for a few minutes.
Step 4.
Put the toasted Sunflower seeds into a food processor or blender ( I used a blender on the chop setting )
and blend until a smooth, creamy, buttery consistency.
I added a little sea salt but that’s up to you and your personal preference.
When you are blending the Sunflower seeds do so in short bursts so that the blender doesn’t overheat and the seed butter doesn’t get hot.
Step 5.
Spread on hot buttered toast
Step 6.
